I was craving something carb-y yet healthy tonight. I prefer to make desserts from scratch so they're less processed, but still taste yummy. This zucchini bread was inspired by the massive zucchini I had to do something with, as well as my cravings :P I hope you enjoy this great summer time recipe (and the added vegetables it sneaks into your diet).
A friend of my mom gave us super big zucchini. I've never seen such massive ones, and they definitely went to good use. In this recipe, you'd normally use 2-3 zucchini, but this large one was sufficient for me. To save time, I used a food processor with a grater attached, but a hand grater would also work just fine. Once you've grated the zucchini, make sure you press it in a colander to remove any extra moisture (credit to my mom for the bottom right picture, still haven't mastered taking pictures with no hands XD ).
While the zucchini is still draining in the colander, melt the butter and combine with the coconut sugar. Coconut sugar is much better for your blood sugar--it's more slow acting and less processed than white or brown cane sugar is. The only downside to coconut sugar is that sometimes it doesn't dissolve. Rapidly stirring can help it melt a bit and make a better tasting cake.
And....she makes an appearance again. This little doggie followed me around the kitchen the whole time I was cooking. She may not like zucchini (or be allowed to eat it) but she sure was trying.
I normally combine baking soda, baking powder, and spices before I combine the dry ingredients. It's easier to incorporate them and they get distributed more evenly.
Add the flower in a little bit at a time. you should have a pretty thick dough at the end. Then combine the zucchini and spread into a greased pan. Cook for about 30 min in a 12" x 12" pan for 30 min. Credit to my sister for the bottom left picture :)
